Trillions of ways to cut a carcass. Völur's AI finds the best one.

How many ways can you cut, sort and process a single animal? In the meat industry, the answer runs into the trillions. For decades, choosing the best one has been left to manual calculations and experience.

On Tuesday, we joined “Tech on the Menu,” hosted by Völur at Oslo Science Park during Oslo Innovation Week, together with Nortura and Microsoft, to see how that is changing.

A problem too big for people

Every day, processors decide how each carcass is sorted and cut, and those decisions have to match what customers actually ordered. With that many combinations, no planner can find the optimal plan by hand. The cost shows up everywhere: thin margins, inefficient production, overstocked materials, food waste, and more animals used than demand requires.

Let the data decide

Völur’s AI uses data collected across the value chain to make the cutting decisions. Processors get daily production plans and real-time insights that support decisions at every level, from strategy down to the factory floor.

The results

  • 3% higher carcass value

  • 5% higher sales

  • Lower emissions and less waste

Three percent may not sound like much. In an industry that runs on thin margins, it is.

Why it matters to us

Deep tech doesn’t only belong in labs and data centres. Some of its biggest impact comes from industries that have run the same way for decades.

Thank you to Völur for having us.
